Fresh Peach Muffins

Tonight I made these muffins they are YUMMY!! The batter seemed pretty greasy but they came out good. I used 2 large peaches and I also used olive oil because I was out of canola oil.

I tried these muffins at my friend Delaney's house and g otthis recipe on Real Mom Kitchen.
Peach Muffins

3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups vegetable oil
3 eggs, lightly beaten
2 cups white sugar
2 cups peeled, pitted, and chopped peaches

Preheat oven to 400 degrees F Lightly grease 18 muffin cups. (I used muffin liners)
In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups.
Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.

Busy Busy Busy Days!

The past couple of weeks have been CRAZY busy for KaysvilleMomma!

My baby turned 4, we went on a weekend trip, school started (a few weeks ago) not without a bit of drama, photography-photography-photography, planning an activity for the Primary kids in our ward, and few visits to the doctor for the little guy! Oh yeah and I have been a CANNING MACHINE!

Yes my little man is 4! I can't believe how quickly time flies. He is such a fun little guy. He is full of energy! TOO MUCH ENERGY sometimes. We had felt as though he had a problem with ADHD and after a trip to the pediatrician and a psychologist it has been confirmed. This means that we at least now have a direct to go in being better parents and helping him continue to grow into the great kids that we know he is.

The Princess started 1st grade -- and like I said there was a bit of drama! We had started out doing homeschool this year. We thought it was what was best for her. After 2 days (yes I know that's not long) we decided that it would be better for all of us if she went to the public school. She told us that she wanted mommy to be her mommy not her teacher. She loves school and she tells me VERY frequently that she doesn't like homeschool. With her new adventure into the 1st grade she has also developed an interest in Hanna Montana - dang - we held that one off as long as we could.

Last weekend we had a fun trip to St. George. The fireman had to go give a test to the St George Fire Department. It was fun to get away. The princess asked us to get the Hanna Montana movie from Redbox -- and now the little man has decided that he too likes Hanna Montana. Oh yes --- and he likes waitresses - we were at the Pizza Factory and everytime the server came to our table he started yelling at her, "Name? Name? Hey, Name?" He never go her name....

Me, I have been trying to keep it all together! I have done SEVERAL photo shoots, including a wedding yesterday. I have also been doing LOTS of canning. I have canned 33 jars of salsa, 18 dill pickles, 8 sweet dills, 9 relish, and 12 chili sauce. I have some SUPER yummy Sweet Pickles doing their thing in a big jar for 6 more days before they are ready to be canned. I have also made strawberry and also Raspberry/Peach freezer jam.

CRAZY!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Produce Yummy Produce!!

Here is what we got with the Bountiful Baskets co-op this week:

1 small seedless watermelon
4 large grapefruits
6 Pears
1 Bunch of Brocoli
1 Head of Roamine Lettuce
1 Bunch of Radishes
2 Large Green Peppers
3 lb bag of Gala apples
7 avacodos
8 Bananas
5 Large baker Potoatoes
10 Peaches

All of that was just $16.50

I also went to a local produce stand and got 15lbs of tomatoes, onions and pepper for salsa making for $20!
