Healthy-ish Chocolate Chip Muffins!!
Who doesn't love a good chocolate chip muffin?? I was inspired to make some almost healthy chocolate chip muffins by my Mother-in-Law. She always tweeks recipes a little bit to make them healthier. So I gave it a try myself.
They turned out pretty good!! I will make them again, but I think I will use 1/2 bag of chocolate chips instead of the whole thing.
I am posting this the way I made it - in the parenthesis is the regular recipe.
1 Cup Flour
1 Cup Rolled Oats that have been run through the food processor (1 Cup Flour)
1/3 Cup of Brown Sugar
1/3 Cup of White Sugar
2 t. Baking Powder
1/2 t salt
2/3 cup milk
1/2 cup of homemade pearsauce, you could use applesauce (1/2 melted butter)
4 T. Water (No water)
2 T. Flax Seed Meal (2 eggs)
1 t. Vanilla
1 Package of chocolate chips
Preheat oven to 400 and grease 12 muffin cups, I actually used the mini muffin cups.
In a large bowl, stir together all the dry ingredients. Then add all of the wet ingredients and stir just until blended. Stir in the chocolate chips.
Spoon batter into the muffin cups and back just until they start to brown. (15-20 minutes if using the full size cups.

These look yummy! Think I'll give them a try today. I'm going to use my new silicon muffin tin liners and see how they work out!

They look wonderful.
I loved the muffins! Anything with chocolate chips I have to try. I will definitely make them again. I like the fact that they were sort of healthy. I used whole wheat flour instead of the oatmeal and it worked great.
